Biscoff Cookies and Cream Bars

Biscoff Crust:

  • 48 biscoff cookies (or 1 and a 1/2 packs of 8.8oz cookies)

  • 1/2 cup butter melted

  • 1/8 tsp salt

Note: Bake the crust at 350° F for 8-10 mins. Careful to not burn your crust :)

Cream Filling:

  • 3 (8 oz. blocks) of cream cheese

  • 5.5 oz of heavy whipping cream/table cream

  • 3/4 cup sugar

  • 4 eggs

  • 2/3 cup sour cream

  • 3 tbsp vanilla

Biscoff Cream Layer:

  • 1/2 cup of semi-melted biscoff spread

Topping:

  • Reserve 1 cup of melted biscoff spread for your top

Directions:

Crumble biscoff cookies and add butter. Use a blender/food processor and then add butter by hand until fully incorporated. Bake at 350° F for 10 mins.

You can do all this in a blender or by hand. Using a blender:

Beat eggs and sugar till fluffy

Add in cream cheese, sour cream, and heavy cream (beat until combined, don’t overbeat)

Add in vanilla extract.

Pour 3/4 of the cream mixture into your crust. Reserve 1/4 of the cream mix and add your 1/2 cup of biscoff spread to it. Drizzle this onto your cream mix pan and marble it slightly with a butter knife.

Bake at 325° F for 45 mins. Cool and add melted biscoff spread and set in fridge.
